Lassi is a popular, traditional, yogurt-based drink from India. It is a biend of yogurt, water, spices and sometimes, fruit.

Banarasi lassi is more like a dessert drink. The curd for this lassi is made with reduced milk so the lassi gets a nice creamy texture. The curd is set in to wide vessels called parat so it gets a larger layer of malai on top. It is served in earthen cups with a generous blob of rabdi over it.
